In the beverage industry, a chiller removes the heat gained from the process during mixing, cooking, or after pasteurizing the product.
Recirculating refrigerated fluid chillers are used in the wine and microbrew industry to control temperature in the production of fine table wines and beer. To create these high quality wines and beer the proper temperature must be maintained during the entire production process.
Breweries use chiller systems to cool down the hot wort to a lower temperature before it is transferred to a fermentation tank containing the yeast. This is done by passing the hot wort through wort chiller with a plate heat exchanger where the heat from the wort is transferred to cold brewing water.
Some brewers are still opting for "pub type chillers", relying on ice banks as the preferred method of cooling. However, by using a glycol chiller (process cooling chiller), brewers using this method of cooling gain from important advantages:
